Fresh seasonal ingredients and exclusively local suppliers reign in Suriya and Iuliia’s kitchen.
Alongside respect for tradition, they give a contemporary flair to some dishes such as cinghiale suveretano (a lighter version without tomatoes), squid ink spaghetti with artichokes and tortelli stuffed with ricotta and spinach, a staple on the menu.
Bread, cakes, and jams are homemade, just like the fresh and stuffed pasta. Meat and fish are strictly purchased from trusted fishermen and butchers.
